Don’t wait for magic, you can make it with the cup.
The coffee ceremony is a kind of celebration of the new day. Celebration, we were able to wake up and start a new day. Many people around the world, aren’t as lucky. Celebrate, you are here, “Nothing happens”.
The difference between “tea ceremony” and “coffee ceremony” is not only in a drink but also “Coffee ceremony” is the celebration of the new morning and “Tea ceremony” is a celebration of a day.
When you start the coffee ceremony, you should forget what you have to do during a day, or you will have problems. A coffee ceremony is a kind of meditation. Forget about life when you are meditating.
The coffee ceremony, if you have to do it every day, will never be boring. The moment happens just once and is never repeated. Brewing and preparation are always different. You will use different coffee, you will be in a different mood, situation, light can be different, time…..Focus on the moments and details and see this differences. You will be able to sense the detailed differences. Your life will be fuller. Life is mainly from small pieces, moments, only sometime happening big moments. You can’t live only for them. You have to know when to live and also appreciate small moments. You can’t always wait for big moments.

BEFORE YOU START
For some people:
You will need a big wooden dining table, with the barista on one side and consumers on the other side of the table and lots of light, the best morning light. Once the coffee is ready, wait 3 mins, mix the coffee in a jar and serve it in cups on the table where people are sitting. While waiting for three mins let people know what to expect from the coffee and also tell them how to drink it. First, start by smelling the coffee, taste it while it is warm, hold the cup with both hands and start to drink as long as the temperature is the same as body temperature. You can use thermo bottle if you have more coffee and serve it in smaller cups until you finish drinking.
The coffee ceremony should be easier and not as strict as a tea ceremony, but you should keep some basic rules to the max. Enjoying of coffee flavours.
For one person:
Standing at a better table next to a window.
After grinding, wait 3 mins but not more than 10 mins. The coffee grinds after grinding at a higher temperature. It will be easier to brew. After your water boils, wait 3 mins.
Use your talent to decorate the table. Add some sculpture and decoration for good luck. Don’t leave the table empty. Decorate it with pictures, flowers or other decorations, the best cactus.
Blooming is supposed to be like when you prepare for meditation. First, 3 x fast briefs, then slower and slower brief, the same for the first time, the 3x fast circuit around the middle to sack water to coffee, amount + power of stream would depend on the coffee. Natural, Honey more, dry less. Also depending on the process, I will use a variety of filters from Chemex – tick up to Hario, more for dry and Kalita basket, more for Natural processed Honey.
Bloom time: 20s blend, dark roasted coffee, 30-46s dry process, some honey
45-75s Natural and honey
3 x slower do eclipse against a clock
3 x beefing
3 x to do eclipse towards a clock
3 x briefing after each movement. This can help us recognize the aroma of the coffee and how it is changing. With the smell, we can also see if the coffee is getting weaker. Once the smell weakens, we can stop brewing.
Breathe slower, just as the coffee extracting process slows down we have to get slower and let coffee extract longer.
Breathing pushes, us also to focus on the coffee and not something else. Also, it is a way to meditate.
Wait until the water goes down
3 x to do eclipse slower against the clock
3x to do towards the clock
Repeat until the end and always slower, slower. Slower.
3 mins wait after the end.
- Holding cups
- Smell aroma of coffee
- Drinking ritual, 3 steps
- Taste with the end of the tongue
- sack to mouth and hold for a couple seconds
